Ingredients

  • 2 tbsp Olive Oil
  • 2 large Sweet Potatoes (or regular baking potatoes) cooked and peeled
  • 2 cups (500g) Red Lentils Cooked
  • 1/2 cup (90g) Sweet Corn
  • cup (60g) Peas
  • 1 Spring Onion Chopped
  • 3 cloves Garlic Minced
  • 2 tsp Smoked Paprika
  • 2 tsp Dried Thyme
  • 1 tsp Curry Powder
  • ½ tsp Ground Cumin
  • ½ tsp Salt
  • ¼ tsp Chili Powder
  • ½ cup (30g) Breadcrumbs use gluten-free breadcrumbs or almond flour for gluten-free patties

Instructions

How to make Sweet Potato Patties

  • Put the cooked potatoes, lentils, breadcrumbs, spring onion, corn, peas, garlic, and spices into a food processor.
  • Pulse for 1-2 minutes or until everything is well combined and forms a cohesive mixture.
  • Use a scraper to remove the mixture from the food processor and divide it into 6 equal portions.
  • Roll each portion into a ball and then gently press them down to form patties.

Cooking Methods:

    Pan-Frying:

    • Heat olive oil in a pan over medium heat.
    • Place the patties in the pan and cook for 3-5 minutes on each side, or until they are golden and lightly crispy.
    • Serve the patties hot and enjoy their delicious flavors.

    Grilling:

    • Brush the patties with olive oil to prevent sticking.
    • Preheat the grill to medium heat.
    • Grill the patties for 3-5 minutes on each side, until they are golden and starting to turn crispy on the outside.

    • Preheat your oven to 375°F (190°C).
    • Place the patties on a baking sheet lined with parchment paper.
    • Bake for 20-25 minutes, flipping halfway through, until they are golden and cooked through.

    Air Frying:

    • Preheat your air fryer to 375°F (190°C).
    • Lightly grease the air fryer basket.
    • Place the patties in the basket in a single layer.
