This easy vegan blender sweet potato lentil patties with roasted veggies recipe is so simple and easy to make…and it’s loaded with flavours and nutrients. Think fluffy patties packed with flavour and full of plant based protein. They are so incredibly light, delicious and can be eaten as a snack, dinner or lunch. They work in everything from pita bread to salad bowls (not to mention burgers – yum). And they are incredibly easy to make because the food processor or blender does all the work for you. 

I like to use leftover patties in burgers for next days lunch or with a healthy side of salad. They are easy to bring with me to-go and keep me feeling energised and full for longer.

These delicious easy vegan blender sweet potato lentil patties are actually great for meal prep. The patties are freezer friendly and can be frozen for up to 3 months. I like to make a large double or triple batch and freeze the leftovers for later. It’s such a great and easy way to make life easier on a busy day…and it also ensures that there’s always a healthy and nutritious meal waiting if I’m not in the mood to cook up a storm.

You can eat these amazing and fluffy vegan potato lentil patties as they are or dipped in a sauce as a quick and healthy snack. You can also eat these delicious protein packed patties in burgers or pita bread or serve them with a side of salad or my favourite easy roasted veggies.

How to make easy oven roasted veggies:

Instructions

  • Preheat the oven to 400F and line a baking trey with baking paper. Add the chopped veggies to the plate and drizzle olive oil on top. Season with dried thyme and salt and mix everything together until all the veggies are covered with oil and seasoning.
  • Cook the veggies in the middle of the oven for 30 minutes (or until they are golden brown at the edges), turning them over halfway through. Once the veggies are cooked, remove from the oven and serve. 

How to make these easy vegan blender sweet potato lentil patties:

  • Put the cooked potatoes, lentils, spring onion, corn, peas, garlic and spices into a food processor and pulse for 1-2 minutes or until everything is combined. Use a scraper to scrape out the mixture and separate into 6 equal balls. Roll the balls firmly together and gently press them into patties.

Cooking in a pan

  • Begin by heating olive oil in a pan and grill the patties 3-5 minutes on each side or until they are golden and lightly crispy. Serve hot and enjoy. 

Cooking on the grill

  • Start by brushing the patties with olive oil and grill them on the BBQ for 3-5 minutes on each side or until the patties are golden and starting to turn crispy on the outside. Serve hot and enjoy.

Ingredients
