2poundsCarrotsFinely Chopped
1tbspPaprika
2tbsp Fajita Spice Mix
3tbspTomato Pure
4clovesGarlicMinced
Pinch of Salt
4-6largeTortilla wraps
½cupVegan Shredded Cheese
2 tbsp Coconut Oil or Olive Oil
Instructions
Preheat the oven to 400F.
Heat coconut oil in a large pan and add the finely chopped carrots. Let the carrots cook at medium high heat for 3-5 minutes, while stirring occasionally.
Once the carrots start to soften and get a little browned on the edges, add paprika, fajita spice mix, salt, garlic and tomato pure. Mix everything together and lower the heat to a simmer.
Let the carrots cook for a few more minutes, before removing from the heat.
Grease a pan with olive oil and lay out the tortillas. Generously fill each tortilla with the carrot mix and roll into a wrap. Place each rolled up tortilla in the greased pan and top with vegan cheese.
Cook the wraps in the oven for around 10 minutes or until they start to turn golden and the cheese has melted.
Take the wraps out of the oven and serve as is or with a side of salad and a dip.
