This 5-ingredients vegan budget wraps recipe is absolutely loaded with smoky flavors, savory spices and delicious textures. There’s only a few ingredients in this recipe, but they are working hard to bring you maximum flavor.
This is one of those recipes that came into creation by realizing it was dinner time, and no one had been grocery shopping yet. Oops.
Well, luckily, there was still carrots, garlic, tortillas and all the spices in the world in my kitchen – and that’s how this very humble, delicious and flavor packed dish came about.
It always amazes me how many of my favorite recipes are created when I feel like there’s almost nothing left in my refrigerator. It seems like my hunger mixed with a hint of desperation, brings out the creative cooking juices.
Anyway, this recipe is super simple, so simple, I wondered if I should even put it on the blog – but because the taste was so delicious and savory, and it just left me craving more, I decided to share it with everyone.

Instructions
- Preheat the oven to 400F.
- Heat coconut oil in a large pan and add the finely chopped carrots. Let the carrots cook at medium high heat for 3-5 minutes, while stirring occasionally.
- Once the carrots start to soften and get a little browned on the edges, add paprika, fajita spice mix, salt, garlic and tomato pure. Mix everything together and lower the heat to a simmer.
- Let the carrots cook for a few more minutes, before removing from the heat. Grease a pan with olive oil and lay out the tortillas. Generously fill each tortilla with the carrot mix and roll into a wrap. Place each rolled up tortilla in the greased pan and top with vegan cheese.
- Cook the wraps in the oven for around 10 minutes or until they start to turn golden and the cheese has melted. Take the wraps out of the oven and serve as is or with a side of salad and a dip. Enjoy.

- 4 cloves Garlic Minced
