Easy Arugula salad with peppers, grapes and peanut dressing (vegan and GF)
This might just be one of the best and easiest arugula salad recipes ever created. It barely takes 10 minutes to create this tasty salad…and it’s so incredibly tasty. Think spicy arugula and bell peppers coated in a delicious and creamy peanut butter dressing and accentuated by sweet grapes and fresh basil. It doesn’t get much better than this. Plus, it’s vegan and completely gluten-free, but you will never even think about any of that, because the flavours and textures grab all the attention. This easy to make arugula salad can be served as a main dish for a light meal or served as a delicious side dish to any main. It’s loaded with flavours, healthy nutrients and amazing fresh, crispy and crunchy textures…all coated in peanut butter. Yum.

- 5 oz Arugula Salad Rinsed and dried
- 1 cup Seedless Grapes Cut into halves
- 1 Red Bell Pepper Sliced
- 1 Yellow Bell Pepper Sliced
- 1 bunch Fresh Basil Chopped
- ½ cup Peanuts Optional
Peanut Butter Dressing
- 3 tbsp Peanut Butter
- 1 clove Garlic Minced
- ½ tbsp Fresh Grated Ginger
- 1 tsp Apple Cider Vinegar
- 1 tsp Chilli Sauce Mild or hot as you prefer
- Pinch of salt
- 1-2 tbsp Hot water To make the dressing thinner
Arugula Salad
Add the rinsed and dried arugula salad to a bowl along with the grapes, chopped fresh basil and sliced bell peppers.
Drizzle the peanut butter dressing on top and combine everything until all the salad is coated in peanut butter dressing. Top with chopped peanut for a little extra crunch and serve.
