What to do if you are allergic to peanuts?
If you are allergic to peanuts and still want to make this recipe, there’s several possible substitutes. You can easily replace the peanut butter with almond or cashew butter (if you aren’t allergic to almonds or cashews) and replace the peanut topping with either roasted almonds or cashews. This substitute still adds all the same essential amino acids, not to mention the creaminess in the dressing and the delicious crunchy texture.
If you’re allergic to all nuts, you can simply replace the dressing with your favourite salad dressing and replace the peanut topping with roasted pumpkin seeds. The pumpkin seeds still adds essential amino acids and lots of extra crunch to the salad.
Can you still make this salad if you don’t have arugula
Yes, you can make the salad and dressing even if you prefer using a different type of salad to arugula. Arugula has a strong and spicy taste that really compliments the flavour combinations in this salad, but if you prefer a more subdued salad flavour then you can absolutely replace it with your favourite type of salad. I’ve also tried using my peanut butter salad dressing with mixed baby salad and it turned out amazing.

Peanut Butter Dressing
- Mix all the ingredients together in a small bowl until it’s completely combines.
Arugula Salad
- Add the rinsed and dried arugula salad to a bowl along with the grapes, chopped fresh basil and sliced bell peppers.
- Drizzle the peanut butter dressing on top and combine everything until all the salad is coated in peanut butter dressing. Top with chopped peanut for a little extra crunch and serve.

Ingredients
- 5 oz Arugula Salad Rinsed and dried
- 1 cup Seedless Grapes Cut into halves
- 1 Red Bell Pepper Sliced
- 1 Yellow Bell Pepper Sliced
- 1 bunch Fresh Basil Chopped
- ½ cup Peanuts Optional
Peanut Butter Dressing
- 3 tbsp Peanut Butter
- 1 clove Garlic Minced
- ½ tbsp Fresh Grated Ginger
- 1 tsp Apple Cider Vinegar
- 1 tsp Chilli Sauce Mild or hot as you prefer
- Pinch of salt
- 1-2 tbsp Hot water To make the dressing thinner
