How to make Cashew Coffee creamer

    To Soften the Cashews (Optional):

    • - High-Powered Blender: If you have a high-powered blender, you can skip this step as it will blend the cashews into a smooth cream without soaking.
    • - Standard Blender: If you don't have a high-powered blender, softening the cashews will help you achieve the creamiest coffee creamer.

    How to Soak the Cashews:

    • Place the raw cashews in a bowl.
    • Cover the cashews completely with water.
    • Let the cashews soak for at least 6 hours and up to 48 hours until they are very tender.
    • Once soaked, drain and rinse the cashews thoroughly before using in your recipe.

    How to Make Cashew Coffee Creamer:

    • Blend the Ingredients: Place the cashews, water, sweetener (if using), vanilla extract (if using), and salt into a blender. Blend the mixture until it is completely smooth and creamy, ensuring there is no graininess. It's crucial to blend longer than you might expect. I typically blend mine for 3-5 minutes in my high-powered blender to achieve a perfectly smooth consistency without any pulp. The friction from blending might make the cashew cream slightly warm.
    • Store Properly: Pour the cashew coffee creamer into a bottle and store it in the refrigerator. It will stay fresh for about one week. Always give the creamer a good shake before using.

    Notes

    Water Amount: Start with 1 ¼ cups (300 ml) of water to achieve a very rich cream. If you prefer a thinner consistency, gradually add more water until you reach the desired thickness.
    Flavorings: Sweeteners and vanilla extract are optional. Begin with smaller amounts of sweetener and vanilla, as you can always adjust to taste later. This way, you avoid making it too sweet or overpowering with vanilla from the start.
