Ingredients

  • 1 tbsp Olive Oil
  • 1 can Chickpeas
  • 1 can Red Kidney Beans
  • 1 can Corn Drained
  • 1 Red Bell Pepper Sliced
  • 1 Red Onion Diced
  • 1 cup Gren Beans
  • 2 cloves Garlic Minced
  • 2 tbsp Tomato Paste
  • 2 Sundried Tomatoes Chopped
  • ½ cup Stale Bread Cut into Cubes
  • 1 tbsp Paprika
  • Pinch of dried Chili
  • 1 tbsp Sweet and Sour Chili Sauce or hot sauce
  • 1 tsp Onion Powder
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme
  • Salt to taste
  • Fresh Basil as Garnish Optional

Instructions

  • Heat olive oil in a large skillet and add the chickpeas and kidney beans. Season with salt, paprika and dried chili and let it cook for 1-2 minutes at medium high heat. Add the red kidney beans, diced onions and let everything cook for a few more mintes while stirring ocassionally.
  • Next, add the minced garlic, sliced bell pepper, green beans, corn and stale bread. Mix until everything is combined and give the bread a moment to soak up some of the flavors.
  • Mix in tomato purée, sundried tomatoes, sweet and sour chili sauce and add the rest of the spices. Stir together until everythinf is combined and add extra salt if needed. Serve with a garnish of fresh basil (optional) and enjoy.
