With everything that’s going on in the world right now, I’m craving easy and healthy comfort food recipes. This easy one Pot Chickpea Pantry Bowl is made almost entirely with basic pantry foods. Made simply with chickpeas, red kidney beans, spices and a few optional veggies. And it’s completely vegan and totally delicious.

Cooking with pantry food doesn’t mean it still can’t be delicious and loaded with flavors. Some of my favorite foods are pantry stables. Chickpeas are always first on my favorite pantry food list – there’s so many amazing things you can do with them (Hummus, roasted chickpeas and my Chickpea veggie cakes are just a few options)

Vegan Comfort food

I don’t know about you, but I’m craving easy dinners and comfort food right now. And nothing is more comforting to me than a hot bowl of savory chickpeas. This recipe is a life saver on a hectic day. It’s loaded with a few very hardworking ingredients that pack a delicious punch.

Think savory chickpeas roasted first in olive oil, mixed with kidney beans that soaks up all the flavors and becomes soft on the inside, together with just a few veggies. And all this goodness is held together by stale bread woken back to life with a quick fry in the pan – the bead soaks up all the juices and spices and takes on the all important supporting role as a crunchy, spicy sidekick to the chickpeas. It’s so good.

This easy comfort food bowl hits all the right spots – simple to make, easy ingrediets that you’re almost certain to have in your home, time saving and packed with amazing flavors. It’s my go to end og the night, end of the week, last-minute recipe that I know always turns out amazing and tastes of comfort. You know those recipes that just seem to set the world right again, this is one of those.

And what makes this recipe even better, is how it combines warming flavors with healthy, immune system boosting ingredients. It doesn’t get much better than that.

Cooking with Pantry stables

Creating a meal out of pantry stables requires a little creativity, but the results can be delicious. This Easy One Pot Chickpea Pantry Bowl is made almost entirely out of pantry stables.

It uses chickpeas, red kidney beans and spices to create the flavor packed base for the recipe. I like to add whatever vegetables I have in the house. My favorites include adding cooked and diced potatoes, sweet potatoes, mushrooms and peas. Anything works with these flavors and spices.

Gluten Free version

If you need to make this recipe gluten free, you can just leave the bread out alltogether. Or you can simply replace it with gluten free bread.

I use the bread in this recipe to add extra texture and to soak up the spices. It’s not necessary for the flavor of the dish and the dish will still be delicious without the bread.

Optionally, you could add chopped almonds to replace the crunchy texture or ude grilled tofu (it will soak up all the flavors and become slightly crispy on the outside).

How is this Easy One Pot Chickpea Pantry Bowl made? It couldn’t be easier:

  • Heat olive oil in a large skillet and add the chickpeas and kidney beans. Season with salt, paprika and dried chili and let it cook for 1-2 minutes at medium high heat. Add the red kidney beans, diced onions and let everything cook for a few more mintes while stirring ocassionally.
  • Next, add the minced garlic, sliced bell pepper, green beans, corn and stale bread. Mix until everything is combined and give the bread a moment to soak up some of the flavors.
  • Mix in tomato purée, sundried tomatoes, sweet and sour chili sauce and add the rest of the spices. Stir together until everythinf is combined and add extra salt if needed.
  • Serve with a garnish of fresh basil (optional) and enjoy.

Ingredients

  • 1 tbsp Olive Oil
  • 1 can Chickpeas
  • 1 can Red Kidney Beans
  • 1 can Corn Drained
  • 1 Red Bell Pepper Sliced
  • 1 Red Onion Diced
  • 1 cup Gren Beans
  • 2 cloves Garlic Minced
  • 2 tbsp Tomato Paste
  • 2 Sundried Tomatoes Chopped
  • ½ cup Stale Bread Cut into Cubes
  • 1 tbsp Paprika
  • Pinch of dried Chili
  • 1 tbsp Sweet and Sour Chili Sauce or hot sauce
  • 1 tsp Onion Powder
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme
  • Salt to taste
  • Fresh Basil as Garnish Optional
