  • 1 tbsp vegetable oil - coconut, canola, or olive oil
  • 4 slices red onion
  • 1/2 red bell pepper - sliced
  • 1 avocado - sliced
  • 1 small handful mixed salad greens

For the Dressing:

  • Juice from ½ lemon
  • 2 tbsp coconut yogurt - or any yogurt of your choice
  • Pinch of salt
  • 1 tsp syrup - like maple or agave
  • 1/2 tsp fresh thyme or basil - chopped

How to make rye bread sandwiches Instructions:

    Make the dressing:

    • In a small bowl, mix together the lemon juice, yogurt, salt, syrup, and chopped thyme or basil. Stir until smooth and set aside.

    Cook the sweet potato:

    • Heat 1 tbsp of oil in a frying pan over medium-high heat.
    • Add the sweet potato slices and cook for 3-5 minutes on each side, until golden brown and tender. Check with a fork or knife to make sure they’re soft inside. Once done, remove from the heat.

    Prepare the bread:

    • Lightly toast the rye bread slices either in a toaster or warm them in the microwave for about 1 minute.

    Assemble the sandwich:

    • Spread the prepared dressing on each slice of the toasted rye bread.
    • Layer one slice with mixed salad, red onion, bell pepper, avocado, and sweet potato slices.
