Rye Bread Sandwich
Are you looking for a tasty vegan sandwich? Then look no further. This Rye Bread sandwich is all of that and it’s also really easy to make – not to mention super healthy.
I created this sandwich after Ea introduced me to her newest bread creation; the easy rye bread recipe. It immediately became one of my new favorties. There’s nothing easier than bringing a sandwich with you on a busy day – but until I was introduced to the easy rye bread recipe, I was having to deal with regular sandwich bread.
Although I love cakes and sweets almost every day, I really prefer to eat a more healthy lunch (It doesn’t make much sense, I know). A healthy lunch makes me feel like I have much more energy to get through the day. It also keeps my blood sugar levels more stable, plus it makes me feel like it’s okay to get an afternoon treat.
This vegan rye bread sandwich is made of almost all the veggies I adore the most. From the delicious and creamy avocado to the crunchy sunflower seeds, this sandwich has all the textures.
Rather than using a mayo substitude, I’ve gone with a fresh coconut yoghurt dressing – it adds a wonderful and sweet twist that’s balanced by the freshness of the lemon.

Rye Bread Sandwich
Ingredients
- Rye sandwich bread
- 1 Tomato Thinly Sliced
- 1 tbsp Sunflower Seeds
- 1 Avocado Sliced
- Juice from ½ Lemon
- 1 small handful Salad
- 2 tbsp Coconut Yoghurt
- Pinch of Salt
- 1 tsp Syrup
- Pinch of Thyme
Instructions
- Start by mixing together the coconut yoghurt with syrup, salt and thyme. Spread the dressing on both bread slices and start stacking the sandwich with salad, tomatoes and avocado slices. Pour lemon juice over the avocado to keep it from going brown. Top with sunflower seeds and put the other rye bread slice on top.
What kind of syrup is the syrup? Simple syrup?
