Ingredients

  • 6-8 oz Rice Noodles or stir fry noodles
  • 2 Bell Peppers Sliced
  • Pinch of salt
  • Pinch of Pepper
  • 3 tbsp Sesame Seeds
  • 1 cup Lambs Lettuce
  • 1 bunch Fresh Parsley Chopped

Tahini sauce

  • ¼ cup Tahini or sesame paste
  • ¼ cup Hot Water
  • 4 tbsp Tamari or Soy Sauce
  • 1 tbsp Vegetable Oil can be avocado oil, olive oil, or your choice
  • 2 tbsp Sweet Chili Sauce
  • 2 cloves Garlic minced or grated
  • Juice from 1 Lime

Instructions

How to make the homemade vegan tahini sauce 

  • Put all the sauce ingredients into a jar and close the lid. Shake vigorously for a minute until all the ingredients are combined and the sauce is creamy and smooth.

How to make easy vegan creamy tahini noodles

  • Cook the noodles as instructed on the packaging. When they are done, drain away the water. 
    While the noodles cook, heat olive oil in a non-stick pan and add the sliced peppers. Season with salt and pepper. Let the peppers cook for 1-2 minutes before adding sesame seeds. Stir to combine and let the veggies cook at medium-high heat for a few minutes while stirring occasionally.
  • When the noodles are done, add the noodles and half of the tahini sauce to the roasted peppers. Toss to combine, before topping with the chopped parsley and fresh salad. Drizzle with the rest of the dressing right before serving and toss to combine everything.
    Serve hot or cold.
