Ingredients

  • 1 tbsp Olive Oil
  • cup Instant Couscous
  • 2 tsp Dried Thyme
  • 2x 8 oz packs Halloumi Cheese Diced
  • ½ head Broccoli
  • 1 cup Green Beans
  • 1 cup Sliced Mushrooms
  • ½ Red Onion Diced
  • 1 tbsp Greek Spice Mix
  • 1 tbsp Paprika
  • 1 tbsp White Wine Vinegar
  • Salt and Pepper to taste
  • 1 bunch Fresh Cilantro or Fresh Basil Chopped

Instructions

  • Start by cooking the couscous as instructed on the package and season with salt, pepper and dried thyme.
  • Rinse the broccoli and break it into small florets.
  • Heat olive oil in a large non-stick pan and add the broccoli florets, onion, mushrooms and green beans. Let them cook for a few minutes before seasoning with Greek spice mix, paprika, salt and pepper.
  • Let the veggies cook for a few minutes at medium high heat. Remove the vegetables and add half of them to the couscous. Set the other half aside.
  • Add chopped cilantro to the couscous and stir until all the veggies and spices are mixed.
  • Add a little more olive oil to the pan and cook the diced halloumi. Season with a little paprika, salt and pepper and let the cheese cook at medium heat until it turns golden. Turn the cheese over a couple of times, so all the sides get golden.
    Once the halloumi is golden, take them off the heat.
  • Serve the couscous in a bowl topped with extra grilled veggies, golden halloumi cheese and a garnish of fresh cilantro.
