This easy spicy halloumi and veggies bowl is ready to eat in under 20 minutes. Think fluffy couscous, savory grilled broccoli and mushrooms, topped with golden grilled haloumi cheese. It’s so good, I don’t even have words to describe it.

This is one of my go-to dishes if I know I’m going to be in a rush and I still want to eat a healthy and balanced meal. Couscous is one of my favorite sources of carbs. They are so light, fluffy and easy to make, and their flavor is determined by whatever you season it with.
I like to season my couscous with mediterranean flavors, because it’s a match made in heaven. The golden grilled haloumi adds extra texture and protein. It’s just so good.

Vegan version

If you’re looking for a vegan version, I’ve got you covered. Simply switch out the halloumi cheese with either firm tofu or tempeh. It will add a little extra prep time, but it’s such a great replacement. Whenever I make the vegan version, I just add extra spices to the tofu or tempeh and grill it until it’s golden and slightly crispy.

So, how is this Easy Spicy Halloumi and Veggies Bowl made? It’s so quick and easy:

Instructions

  • Start by cooking the couscous as instructed on the package and season with salt, pepper and dried thyme.
  • Rinse the broccoli and break it into small florets.
  • Heat olive oil in a large non-stick pan and add the broccoli florets, onion, mushrooms and green beans. Let them cook for a few minutes before seasoning with Greek spice mix, paprika, salt and pepper.
  • Let the veggies cook for a few minutes at medium high heat. Remove the vegetables and add half of them to the couscous. Set the other half aside.
  • Add chopped cilantro to the couscous and stir until all the veggies and spices are mixed.
  • Add a little more olive oil to the pan and cook the diced halloumi. Season with a little paprika, salt and pepper and let the cheese cook at medium heat until it turns golden. Turn the cheese over a couple of times, so all the sides get golden. Once the halloumi is golden, take them off the heat.
  • Serve the couscous in a bowl topped with extra grilled veggies, golden halloumi cheese and a garnish of fresh cilantro. Enjoy.
