Ingredients
2cups (335g)Strawberriesfresh or frozen
4cups (400g)Granulated Sugar
1packageSure Jell Pectin
¾cup (1.8dl)Water
2tbspLemon Juice
1tspVanilla Powderor extract
Instructions
In a large bowl, combine the strawberries and sugar. Mix well and let it sit for 10 minutes.
In a small saucepan, combine the Sure Jell pectin and water. Bring to a boil over high heat, stirring constantly. Boil for 1 minute, then remove from heat.Add the lemon juice and vanilla extract to the strawberries and stir well.
Pour the pectin mixture over the strawberries and stir for 3 minutes, making sure the pectin is completely dissolved.
Transfer the mixture to freezer-safe jars or containers, leaving about 1/2 inch of space at the top for expansion.Let the jam sit at room temperature for 30 minutes, then freeze for up to 1 year.
Notes
Freezer jam is best-used in the freezer within one year (12 month).
