Ingredients
1Ready made Pizza Dough or large Wheat Tortilla
½cupTomato Sauce
1largeSweet PotatoSliced
1tbspOlive Oil
4tbspCoconut Yoghurt
1tbspBBQ Sauce
1tbspSmoked Paprika
½cupShredded Vegan Cheese(or any cheese you prefer)
1bunchParsleyRoughly chopped
Pinch of salt
1tbspGrated Vegan Parmesan
Instructions
Heat the oven to 400F.
Start by heating a pan with a bit of olive oil. Season the sweet potato slices with smoked paprika and cook them for a few minutes on each side until they are golden. Take them off the heat and set aside.
Lay the pizza dough on a baking sheet and spread a generous amount of tomato sauce and BBQ sauce evenly over it.
Next, top the pizza with the sweet potato slices before haphazardly drizzling coconut yoghurt over the top.
Top the pizza with a pinch of salt, shredded vegan cheese and a final layer of vegan parmesan cheese.
Cook the pizza in the middle of the oven for 10-15 minutes or until it's cooked and ready to eat.
