I make this pizza as a quick and healthy dinner and sometimes lunch. It’s so easy and so delicious. I love all the textures – that crispy pizza dough combined with the golden and crispy sweet potatoes, melty vegan cheese and brought together with smoky BBQ flavors. Yum.

Using leftovers

One of the great things about this pizza recipe is its diversity. You can always swithc out one of the ingredients and substitute it with almost whatever you have at hand. It’s quickly becoming my go-to leftovers recipe. Depending on what you have in your kitchen, you can always use regular potatoes instead of sweet potatoes or even switch it out with other veggies like sliced eggplants, zucchinis or even bell peppers. If I have any extra veggies leftover from previous nights dinner, I like to incorporate those. There’s pretty much no limits when it comes to pizzas.

Easy peasy

I like simple food. I want food to be healhty, approachable, easy to cook and of course delicious. That’s why I don’t mind taking a few shortcuts to make life – and dinner – easier.
This vegan pizza recipe is a great example of my cooking philosophy. It reduces food waste, it’s super simple and it’s mouthwateringly good.
If I’m feeling a little extra, I like to make my own pizza sauce…but let’s face it, I’m not always feeling extra. That’s why I don’t mind buying ready made pizza sauce and ready made pizza dough. It makes life easier and if it gets me eating my dinner quicker, I’m all for it.

Super easy cheat trick

When I’m in a rush, or just feeling extra lazy, I like to substite the pizza dough with tortillas. It takes almost no time so it’s ideal if you’re in a rush – plus there’s no sticky dough. I like to think of it as a mix between tacos and pizza. It’s definitely worth a try if you’re in a rush.

So how is this Easy Sweet Potatoes BBQ Pizza made? It couldn’t be easier.
Just:

  • Heat the oven to 400F.
  • Start by heating a pan with a bit of olive oil. Season the sweet potato slices with smoked paprika and cook them for a few minutes on each side until they are golden. Take them off the heat and set aside.
  • Lay the pizza dough on a baking sheet and spread a generous amount of tomato sauce and BBQ sauce evenly over it.
  • Next, top the pizza with the sweet potato slices before haphazardly drizzling coconut yoghurt over the top.
  • Top the pizza with a pinch of salt, shredded vegan cheese and a final layer of vegan parmesan cheese.
  • Cook the pizza in the middle of the oven for 10-15 minutes or until it’s cooked and ready to eat.

Ingredients

  • 1 Ready made Pizza Dough or large Wheat Tortilla
  • ½ cup Tomato Sauce
  • 1 large Sweet Potato Sliced
  • 1 tbsp Olive Oil
  • 4 tbsp Coconut Yoghurt
  • 1 tbsp BBQ Sauce
  • 1 tbsp Smoked Paprika
  • ½ cup Shredded Vegan Cheese (or any cheese you prefer)
  • 1 bunch Parsley Roughly chopped
  • Pinch of salt
  • 1 tbsp Grated Vegan Parmesan
