Ingredients
1Pie Dough
1tbspOlive Oil
5MediumApplesSliced into wedges
3Medium OnionsSliced
2clovesGarlicMinced
½cupVegan Cashew Cheese or Silken Tofu
½cupAlmonds
1tbspCurry Powder
1tbspGreek Spice Mix
1tspDried Thyme
1tspSambal Oelek Chili paste
Pinch of salt
3tbspFresh HerbsTopping
Instructions
Preheat oven to 400F.
Heat olive oil in a large frying pan and add apple wedges and onions. Let the mix cook for 3 minutes before adding all the spices. Mix together well and let it cook until the onions are softened.
Grease a pie plate with olive oil and line with the pie dough. Fill the pie with the apple mix and top with almonds and cashew cheese or tofu.
Bake the pie in the oven for 25 minutes or until the dough is baked and the pie is golden on top.Top the pie with fresh herbs and serve.
