Ingredients

  • 1 Pie Dough
  • 1 tbsp Olive Oil
  • 5 Medium Apples Sliced into wedges
  • 3 Medium Onions Sliced
  • 2 cloves Garlic Minced
  • ½ cup Vegan Cashew Cheese or Silken Tofu
  • ½ cup Almonds
  • 1 tbsp Curry Powder
  • 1 tbsp Greek Spice Mix
  • 1 tsp Dried Thyme
  • 1 tsp Sambal Oelek Chili paste
  • Pinch of salt
  • 3 tbsp Fresh Herbs Topping

Instructions

  • Preheat oven to 400F. 
  • Heat olive oil in a large frying pan and add apple wedges and onions. Let the mix cook for 3 minutes before adding all the spices. Mix together well and let it cook until the onions are softened. 
  • Grease a pie plate with olive oil and line with the pie dough. Fill the pie with the apple mix and top with almonds and cashew cheese or tofu.
  • Bake the pie in the oven for 25 minutes or until the dough is baked and the pie is golden on top.
    Top the pie with fresh herbs and serve.
