Ingredients

  • 1 Pizza Dough
  • 1 cup Broccoli Florets
  • ½ cup Cauliflower Florets
  • 1 cup Baby Carrots
  • 2 cloves Garlic Minced
  • ½ cup Coconut Milk or other non dairy milk
  • 1 tbsp Curry Powder
  • 1 tsp Dried Thyme
  • 1 tsp Dried Basil
  • 1 tsp Smoked Paprika
  • 1 tbsp Soy Sauce or Tamari

Instructions

  • Preheat oven to 400F and line a baking trey with baking paper. 
  • Heat a non-stick frying pan and add broccoli florets, cauliflower florets, baby carrots and spices. Let the veggies fry at medium high heat for a few minutes, while stirring occasionally. 
  • Next, add the minced garlic and quickly stir together. Pour in the coconut milk and soy sauce and let the veggies simmer for 5 minutes while the sauce reduces. 
    Remove from the heat and set aside to cool for a few minutes. 
  • Roll out the pizza dough onto the lined baking trey and spoon the veggies on top. Fold the dough up around the veggies, pressing the ends together firmly. Bake the stuffed bread in the oven for 15-20 minutes or until the bread is golden and done. 
    Serve with a drizzle of sweet and sour chili sauce on top and enjoy.
