Meal prep friendly stuffed bread
Yes, you read that right. This stuffed curry bread is meal prep friendly. You can make it in advance and it will keep for 2-3 days in the refrigerator. Just reheat when you are ready to eat. Or you can freeze the meal for a later day and just reheat in the oven whenever you need a quick and easy dinner.
Pizza dough
For the pizza dough you can either make your own (check out my favourite pizza dough recipes here) or you can take the quick hack way and just get a ready made pizza dough at the grocery store. There’s no right or wrong with this recipe.
Quick hack recipe
If you want the super easy, quick hack dinner then just get a mixed frozen veggies bag from the grocery store and use that in this recipe. Just make sure the veggies are completely defrosted and heated all the way through before filling them in the dough.

Instructions
- Preheat oven to 400F and line a baking trey with baking paper.
- Heat a non-stick frying pan and add broccoli florets, cauliflower florets, baby carrots and spices. Let the veggies fry at medium high heat for a few minutes, while stirring occasionally.
- Next, add the minced garlic and quickly stir together. Pour in the coconut milk and soy sauce and let the veggies simmer for 5 minutes while the sauce reduces. Remove from the heat and set aside to cool for a few minutes.
- Roll out the pizza dough onto the lined baking trey and spoon the veggies on top. Fold the dough up around the veggies, pressing the ends together firmly. Bake the stuffed bread in the oven for 15-20 minutes or until the bread is golden and done. Serve with a drizzle of sweet and sour chili sauce on top and enjoy.

- ½ cup Cauliflower Florets
- 1 cup Baby Carrots
- 2 cloves Garlic Minced
- ½ cup Coconut Milk or other non dairy milk
- 1 tbsp Curry Powder
- 1 tsp Dried Thyme
- 1 tsp Dried Basil
- 1 tsp Smoked Paprika
- 1 tbsp Soy Sauce or Tamari
