Ingredients

  • 2 tbsp Olive Oil
  • 2 Carrots cut into 1-inch chunks
  • 4 Apples cut into wedges
  • 2 Sweet Potatoes cut into 1-inch chunks
  • 3 Yellow Onions cut into wedges
  • 1 tbsp Dried Thyme
  • 1 tsp Sea salt

Instructions

  • Preheat the oven to 400F and line a baking trey with baking paper. Add the chopped veggies to the plate and drizzle olive oil on top. Season with dried thyme and salt and mix everything together until all the veggies are covered with oil and seasoning.
  • Cook the veggies in the middle of the oven for 30 minutes (or until they are golden brown at the edges), turning them over halfway through. 
    Once the veggies are cooked, remove from the oven and serve.
