  • 2 Greek Flatbreads
  • 4 tbsp (60g) Vegan Garlic Cream Cheese - Homemade or storebought
  • 2 Tomatoes
  • 1 tbsp (15g) Red Onion - Finely Chopped
  • ½ tbsp Lemon Juice
  • 1 handful Fresh Cilantro or Fresh Basil - Chopped (about 10-15 g)
  • Pinch of salt
  • 4-6 Falafels -  (store-bought or homemade)

Vegan Garlic Cream Cheese

  • 1+½ cup (225g) Raw Cashews Soaked in hot water for 15 minutes
  • ¼ cup (60g) Unsweeted non-dairy Yogurt
  • 1 tbsp (15g) Lemon Juice
  • 1 tbsp (15g) Apple Cider Vinegar
  • 1 tsp Garlic Powder
  • ½ tsp Onion Powder
  • 1 tsp Dried Oregano
  • Pinch of salt

How to make falafel sandwiches Instructions:

    Prepare the Vegan Garlic Cream Cheese:

    • Soak the cashews: Place the raw cashews in a bowl and cover them with boiling water. Soak the cashews for 10-minutes in the boiling water. Or cover them with cold water and leave to soak for at least 4 hours, or overnight for best results. Drain and rinse the cashews before use.
    • Blend the cream cheese: In a high-speed blender or food processor, combine the soaked cashews, non-dairy yogurt, lemon juice, apple cider vinegar, garlic powder, onion powder, and dried oregano.
    • Blend until smooth: Blend on high until you have a smooth, creamy mixture. If needed, add 1-2 tbsp (15-30 g) of water to help achieve a creamy consistency. Adjust seasoning with salt and more lemon juice if desired. You may need to scrape the sides down a few times to get everything blended to the same texture.
    • Chill the cream cheese: Transfer the mixture to a container and refrigerate for at least 30 minutes to allow the flavors to meld together. Store in the refrigerator for up to 5 days.

    Assemble the Sandwiches:

    • Prepare the vegetables: Finely dice the tomatoes and chop the red onion. In a small bowl, toss the chopped red onion, diced tomatoes and cilantro with 1/2 tbsp (7.5 g) of lemon juice and a pinch of salt. Set aside for a few minutes to let the flavors develop.
    • Warm the flatbreads: Heat the Greek flatbreads in a dry skillet for about 1-2 minutes on each side, or until they are warm and slightly toasted. Alternatively, you can briefly warm them in the oven at 350°F (175°C) for 5 minutes or heat in a microwave for 1 minute,
    • Spread the cream cheese: Generously spread about 2 tbsp (30 g) of the vegan garlic cream cheese onto each warmed flatbread.
    • Add the toppings: Layer the flatbreads with the tomato salsa and chopped cilantro or basil. Sprinkle a pinch of salt over the top for extra flavor.
    • Add the falafels: Place 2-3 falafels on each flatbread. You can leave the falafels whole or lightly smash them with a fork for easier eating.
    • Finish and wrap: Fold the flatbreads around the fillings like a wrap or pita sandwich. If the flatbreads are large, you can cut them in half to make them easier to handle.
