How to Make Subway Italian Herb and Cheese Bread

    Prepare the Dough:

    • - In the bowl of a stand mixer, combine 1 cup of warm water (240 ml), 1 tablespoon of instant yeast (9 grams), 1 tablespoon of sugar (12 grams), 1 1/2 teaspoons of salt (9 grams), and 4 tablespoons of olive oil (60 ml). Let the mixture sit for 5 minutes.

    Mix the Dough:

    • - Add 1 cup of all-purpose flour (120 grams) and mix with the dough hook for 3 to 5 minutes. Gradually add another cup of flour (120 grams) and mix until well combined. Continue adding flour, 1/4 cup (30 grams) at a time, until a soft dough forms. The dough should stick to the bottom of the bowl but pull away from the sides. Mix for a total of about 8 minutes.

    Knead the Dough:

    • - Once the dough is formed but still slightly sticky, turn it onto a lightly floured surface and knead until smooth and soft. Shape it into a ball and place it back in the bowl. Cover with plastic wrap and let it rise for 30 minutes.

    Shape the Loaves:

    • - After the dough has risen, turn it out onto a clean surface and divide it into 4 equal parts. Roll each piece into a long loaf about 9 to 10 inches (23 to 25 cm) long.

    Prepare for Baking:

    • - Place the loaves on a baking sheet lined with parchment paper or a baking mat. Spray the tops with water and sprinkle with the Italian herb seasoning. Press the seasoning gently to help it stick. Ensure there is at least 2 inches (5 cm) between each loaf on the baking sheet.

    Second Rise:

    • - Cover the loaves with greased plastic wrap and let them rise until doubled in size, about 1 hour.

    Bake:

    • - Towards the end of the rising time, preheat your oven to 350°F (175°C). Bake the loaves for 25 minutes until golden brown.

    Cool:

    • - Once out of the oven, cover the loaves with a dish towel and let them cool for at least 30 minutes.

    Serve:

    • - After cooling, slice the loaves down the middle and fill with your favorite sandwich toppings. Enjoy!

    Bread machine tip:

If using a bread machine, run the full dough cycle, typically about 1.5 hours. After the cycle completes, shape the loaves and allow them to rise for an additional hour before baking.
