Ingredients for Italian Herb and Cheese Subway Bread
Dough:
- 1 cup warm water (240 ml, 110 degrees F): The warm water helps activate the yeast, which is essential for the bread to rise.
- 1 tablespoon instant yeast (about 9 grams): Instant yeast speeds up the rising process, making the dough light and airy.
- 1 tablespoon sugar (about 12 grams): Sugar feeds the yeast and adds a slight sweetness to the bread.
- 1 1/2 teaspoons salt (about 9 grams): Salt enhances the flavor of the bread and helps control the fermentation process.
- 4 tablespoons olive oil (about 60 ml): Olive oil adds moisture and richness to the dough, contributing to a soft texture.
- 2 1/2 to 2 3/4 cups all-purpose flour (300 to 330 grams): All-purpose flour forms the base of the dough, providing structure and elasticity.
Italian Herb Seasoning:
- 1/2 tablespoon oregano (about 2 grams): Oregano gives the bread a classic Italian flavor.

Italian Herb and Cheese Bread subway recipe tips and tricks
Top tips:
1. Optimal Yeast Usage: Ensure to use ample yeast for airy bread that rises quickly and beautifully.
2. Moisture for Toppings: Spritz the dough with water to help toppings adhere, even if none are added.
3. Even Baking: Bake in silicone sub roll mats for uniform sub rolls with evenly perforated bottoms. You can also bake on a baking sheet lined with parchment.
4. Shaping: Feel free to shape the dough into various sizes and shapes of sandwich rolls instead of traditional loaves for Hoagie-style bread. Keep in mind that smaller shapes may require less baking time.
Baking machine tip:
If using a bread machine, run the full dough cycle, typically about 1.5 hours. After the cycle completes, shape the loaves and allow them to rise for an additional hour before baking.
Storage tips:
Tips for Maintaining Freshness
– Double Wrap: When freezing, double wrapping the bread (plastic wrap followed by aluminum foil) helps prevent freezer burn and maintains better flavor and texture. It’s a great way to keep the bread fresh while in long term proper storage.
– Refresh Before Serving: If the bread becomes slightly stale, refresh it by warming it in the oven at 350°F (175°C) for 5-10 minutes or toasting it. Top tip: a light sprinkle or brush with water can restore the freshness of the baked bread. Simply brush with a little water before reheating the bread to bring the crusty loaf of bread back to life.
– Avoid Refrigeration if Possible: While refrigeration extends shelf life, it can dry out the bread. For the best taste and texture, store at room temperature or freeze if keeping for longer periods.
Tips for Enjoying Your Subway Sandwich and Sides:
– Mix and Match: Pair different sides to complement your sandwich and create a balanced meal. It’s a favorite bread on any dinner table.
– Add Dips and Sauces: Offer a variety of dips like hummus, guacamole, or yogurt-based sauces to enhance the flavors.
– Fresh and Seasonal: Use fresh, seasonal produce for the best taste and nutritional value.
– Texture Variety: Incorporate crunchy, creamy, and savory elements to keep your meal interesting.
– Presentation: Arrange your sides beautifully on a platter to make your meal visually appealing.

Subway Italian bread Tips
Using instant yeast instead of active dry yeast
You can substitute instant yeast for active dry yeast in equal amounts. Instant yeast does not require proofing in water and can be mixed directly with the dry ingredients.
How long to knead the dough
Knead the dough for about 8 to 10 minutes, until it is smooth and elastic. This helps develop the gluten in the dough, which is essential for the bread’s structure and texture.
How to tell if the bread is fully baked
The bread should be golden brown on top and sound hollow when tapped on the bottom. An internal temperature of around 200°F (93°C) is also a good indicator that the bread is fully baked.
Make smaller sandwich rolls instead of loaves
Divide the dough into smaller portions and shape them into rolls instead of loaves. Adjust the baking time accordingly as smaller rolls may bake faster than larger loaves.
Storage and variations Tips
Storing Leftover Bread
Allow the bread to cool completely, then store it in an airtight container or resealable plastic bag at room temperature for up to 3 days. For longer storage, wrap the bread tightly in plastic wrap and aluminum foil, then freeze for up to 3 months.
Using bread flour instead of all-purpose flour
If you don’t have all-purpose flour you can use bread flour instead of all-purpose flour. Bread flour has a higher protein content which can result in a slightly chewier texture in the bread.
Vegan variation
To make this Subway Italian bread vegan, simply substitute the grated Parmesan cheese with vegan Parmesan or nutritional yeast. Ensure all other ingredients used are plant-based.
