Ingredients
115oz canKidney BeansDrained
115oz canCannellini Beans or Butter BeansDrained
1Red Bell PepperFinely Chopped
1Yellow Bell PepperFinely Chopped
5-8OlivesPits removed and sliced
6-8Oil packed Sundried Tomato halvesChopped
1bunchFresh BasilChopped
Dressing:
2tbspSweet Chili Sauce
1tbspRed Wine Vinegar
1tbspOlive Oil
1tspThyme Fresh or dried as you prefer
½tspSea salt or Kosher Salt
Instructions
In a small mixing bowl mix together the ingredients for the dressing.
Add the drained beans, peppers, olives, and sun-dried tomatoes to a salad bowl. Drizzle the dressing on top and toss the salad to coat everything. Taste test and add more salt if needed. Garnish with fresh basil right before serving and enjoy.
Notes
If you are making this salad in advance, coat it in dressing and store it in a clean airtight container. Wait until right before serving to garnish with the fresh basil.
