This red cabbage salad with raspberry dressing is incredibly delicious, crunchy and loaded with flavors. Who knew that simple red cabbage, edamame beans, red onions and juicy pears could taste so incredibly good.

Ingredients
Raspberry Dressing
1cupFrozen Raspberries
¼cupLemon Juice
¼cupWhite Wine Vinegar
¼cupOlive Oil
3tbspDijon Mustard
2tbspMaple Syrup
Pinch of salt
Red Cabbage Salad
½headRed CabbageSliced
1cupEdamame BeansCooked
2PearsRinsed, pits removed, diced
1smallRed OnionDiced
½cupFeta Cheese(or vegan cheese) Diced
Salt to taste
⅓cupRaspberry Dressing
1bunchDillChopped
Instructions
Dressing
Pour all the ingredients into a blender and blend until the dressing is smooth. Pour into a container (I like to use a sealable glass container or bottle) and store in the refrigerator.
Salad
Add the sliced cabbage, edamame beans, diced pears and diced red onions to a large salad bowl and drizzle with the raspberry dressing. Toss together until all the salad is coated with raspberry dressing. Right before serving, add the feta cheese (optional) and dill.
