Ingredients

Raspberry Dressing

  • 1 cup Frozen Raspberries
  • ¼ cup Lemon Juice
  • ¼ cup White Wine Vinegar
  • ¼ cup Olive Oil
  • 3 tbsp Dijon Mustard
  • 2 tbsp Maple Syrup
  • Pinch of salt

Red Cabbage Salad

  • ½ head Red Cabbage Sliced
  • 1 cup Edamame Beans Cooked
  • 2 Pears Rinsed, pits removed, diced
  • 1 small Red Onion Diced
  • ½ cup Feta Cheese (or vegan cheese) Diced
  • Salt to taste
  • cup Raspberry Dressing
  • 1 bunch Dill Chopped

Instructions

Dressing

  • Pour all the ingredients into a blender and blend until the dressing is smooth. Pour into a container (I like to use a sealable glass container or bottle) and store in the refrigerator. 

Salad

  • Add the sliced cabbage, edamame beans, diced pears and diced red onions to a large salad bowl and drizzle with the raspberry dressing. Toss together until all the salad is coated with raspberry dressing. 
    Right before serving, add the feta cheese (optional) and dill.
