For this cabbage salad the real star of the show is actually the raspberry dressing. It takes the salad from good to amazing. 

The first time I tried a salad with a raspberry dressing I was instantly in love. It was such a unique flavour that just enhances all the salad ingredients…and I knew I had to replicate that dressing. Since I couldn’t get the actual raspberry dressing recipe from the restaurant (not for lack of trying) I decided to go home and recreate it as best I could. And my oh my did I succeed. My raspberry dressing has quickly become a family favourite and I swear I would happily put it on just about everything.

Instructions

Dressing

  • Pour all the ingredients into a blender and blend until the dressing is smooth. Pour into a container (I like to use a sealable glass container or bottle) and store in the refrigerator. 

Salad

  • Add the sliced cabbage, edamame beans, diced pears and diced red onions to a large salad bowl and drizzle with the raspberry dressing. Toss together until all the salad is coated with raspberry dressing. Right before serving, add the feta cheese (optional) and dill.

Ingredients

Raspberry Dressing

  • 1 cup Frozen Raspberries
  • ¼ cup Lemon Juice
  • ¼ cup White Wine Vinegar
  • ¼ cup Olive Oil
  • 3 tbsp Dijon Mustard
  • 2 tbsp Maple Syrup
  • Pinch of salt

Red Cabbage Salad

  • ½ head Red Cabbage Sliced
  • 1 cup Edamame Beans Cooked
  • 2 Pears Rinsed, pits removed, diced
  • 1 small Red Onion Diced
  • ½ cup Feta Cheese (or vegan cheese) Diced
  • Salt to taste
  • cup Raspberry Dressing
  • 1 bunch Dill Chopped
