It’s a low-calorie, immune system boosting soup that’s budget friendly and very, very tasty. You wouldn’t normally expect a healthy soup to be this flavourful, but this comforting curry soup will have you reaching for second helpings.

Ingredients

  • 2 tbsp Olive Oil or coconut oil
  • 4 Yellow Onions Diced
  • 6 Tart Apples Diced
  • 8 tbsp Brown Rice
  • 5 cups Vegetable Broth
  • 1 tbsp Maple Syrup
  • 2 tbsp Dried Thyme
  • 3 tbsp Curry Powder
  • 2 tbsp Tamari or Soy Sauce
  • Salt to taste

Instructions

  • Heat olive oil in a large soup pot and add the diced onions and apples. Let everything cook at medium high heat, while stirring occasionally, until the onions are soft. 
    Add the dried thyme, curry powder and salt and let it cook for 1-2 minutes.
  • Next, add the vegetable stock and bring to a boil, before turning the heat down to a simmer.
    Pour in the brown rice and season the soup with maple syrup and tamari.
    Let the soup cook for 25-30 minutes until the rice is cooked and add extra seasoning and water if needed.
    Serve with an optional topping of fresh mint leaves and enjoy.
