A super healthy and delicious pankace recipe for those days where you really want pancakes, but don't want to compromise on staying healthy.
Serving Size 1person
Ingredients
1egg
1banana
8.8ozRolled Oats
1tbspCoconut oil
Pinch Of Cinnamon
For topping
1Dollop of Greek Yoghurt
1CupFresh Fruits
Instructions
Peel and chop the banana. Mix the banana, protein powder, eggs, cinnamon powder and oats in a blender to make your batter. Heat up half the coconut oil in a non-stick frying pan over medium heat. Use a large spoon to pour little pancakes into the pan. You should get around 3 small pancakes with half of the batter. Cook for about 1 minute on each side. Remove the pancakes when cooked and repeat with the rest of the batter. Serve the pancakes with a dollop of yoghurt and some fresh berries. Tip: Use as many spices as you like. I also like to use cardamom, fresh basil leaves and a little lemon juice.
