Healthy Protein Pancakes


Hands up if you love pancakes!

I confess to loving all things sweet. But I also love finding healthy alternatives to treats. Don’t get me wrong – I still think eating unhealthy once in a while is a good thing. I don’t believe in cutting out cakes and sweets. But I do prefer a healthy alternative for those weeks where I have already overdosed on cakes (it happens).

These pancakes are super healthy and packed with protein, yet they taste delicious. It’s a great and healthy weekend treat that will leave you fealing energized and full.

These pancakes are great with a heaping of fresh berries and greek yoghurt for that extra luxurious feeling.

For those days where I crave extra pampring, I like to mix sugar with lime zest and pour on top of the berries. If you havent tried this yet you DEFINITELY need to. It’s like a small bite of heaven (if I could get away with it, I would put it in every cake recipe).

As an added bonus, these pancakes also meet my laziness criteria – they are quick and easy to make.

So if you are in the mood for a healthy treat, then get cooking.

Super Healthy Protein Pancakes

A super healthy and delicious pankace recipe for those days where you really want pancakes, but don’t want to compromise on staying healthy. 
Serving Size 1 person

Ingredients

  • 1 egg
  • 1 banana
  • 8.8 oz Rolled Oats
  • 1 tbsp Coconut oil
  • Pinch Of Cinnamon

For topping

  • 1 Dollop of Greek Yoghurt
  • 1 Cup Fresh Fruits

Instructions

  • Peel and chop the banana. 
    Mix the banana, protein powder, eggs, cinnamon powder and oats in a blender to make your batter.
    Heat up half the coconut oil in a non-stick frying pan over medium heat. Use a large spoon to pour little pancakes into the pan. You should get around 3 small pancakes with half of the batter. Cook for about 1 minute on each side. Remove the pancakes when cooked and repeat with the rest of the batter.
    Serve the pancakes with a dollop of yoghurt and some fresh berries.
    Tip:
    Use as many spices as you like. I also like to use cardamom, fresh basil leaves and a little lemon juice.
