Ingredients

Authentic Thai Custard

  • 4 Eggs
  • 1 cup Coconut Milk
  • 1 cup Palm Sugar cane sugar, or coconut sugar
  • ¼ tsp Salt
  • ¼ tsp Pandan Extract

Topping

  • ½ cup Coconut Cream
  • ¼ cup Palm Sugar
  • ¼ tsp Salt

Instructions

Making the Authentic Custard

  • First, beat the eggs in a mixing bowl until they are well-combined. Then, add the coconut milk, palm sugar, salt, and pandan extract to the bowl. Mix all the ingredients together until the sugar is dissolved.
  • Next, pour the mixture into a heatproof dish. You can use a round or square baking dish, or even a small ramekin. Cover the dish with aluminium foil.
  • Now, you will need to steam the custard. Place the dish in a steamer basket over a pot of boiling water.
  • Steam the custard for about 30 minutes or until it is set. You can check if the custard is done by inserting a toothpick into the center. If it comes out clean, the custard is ready.

Making the Thai Custard Topping

  • While the custard is steaming, you can prepare the topping.
    In a small saucepan, mix together the coconut cream, palm sugar, and salt. Cook the mixture over low heat, stirring constantly, until the sugar is dissolved and the mixture thickens slightly. It may take a couple of minutes. 
  • Once the custard is done steaming, remove it from the heat and let it cool for a few minutes. Then, pour the topping over the custard. You can spread it evenly with a spoon or spatula.
    Now that your Thai custard is ready, you can chill it in the refrigerator for a few hours before serving. Enjoy! 

How to steam custard in microwave (if you don't have a steamer)

  • Microwave Thai Custard - How to make custard in the microwave 
    Thai custard can easily be made in the microwave if you don’t have a steamer. To make Thai custard in the microwave, you can prepare the custard mixture from the recipe card below and pour it into a microwave-safe dish.
  • Cook the custard mixture in the microwave on medium power for 1-2 minutes at a time, stirring every minute or so, until the custard is just set but still slightly jiggly in the center. Be careful not to overcook the custard, as it will become rubbery and tough.
  • Once the custard is cooked, let it cool to room temperature, then chill it in the refrigerator for at least an hour before serving. Note that the texture of microwave-made custard may be slightly different than custard made in the oven or on the stovetop.

Vegan Thai custard Ingredients:
  • 1 can full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp turmeric (for color)
  • Pinch of salt
  • 1/2 tsp vanilla extract
How to make plant based Thai Custard Instructions:
  1. In a small saucepan, whisk together the coconut milk, sugar, cornstarch, turmeric, and salt over medium heat.
  2. Bring the mixture to a boil, whisking constantly until it thickens and becomes custard-like about 5-7 minutes.
  3. Remove the pan from heat and stir in the vanilla extract.
  4. Pour the mixture into a bowl and let it cool to room temperature, then chill in the fridge for at least 2 hours.
  5. Serve the custard chilled, topped with fresh fruit or sweetened coconut flakes, if desired.

How to use a steamer 
  1. Fill the Steamer with Water: The first step is to fill the steamer with water. Most steamers come with a water reservoir that you fill with water up to the level indicated. Make sure not to overfill, or the water may spill out while steaming.
  2. Place Food in the Steamer Basket: Once the water is filled, place the food you want to steam in the basket. The basket should fit snugly in the steamer, and the lid should fit securely.
  3. Heat the Steamer: Place the steamer on a stove or a heating element and turn on the heat. The water in the reservoir will start to boil, and the steam will start to rise and cook the food in the basket.
  4. Steam the Food: Steam the food for the appropriate time, depending on the recipe and the type of food you are cooking. Check the food periodically to make sure it is cooking evenly and add more water if necessary.
  5. Turn off the Heat and Remove the Lid: Once the food is cooked, turn off the heat and carefully remove the steamer basket from the steamer. Use caution as steam will escape and can burn your hands.
