Prep Time 10 minutes

Ingredients

  • ½ Head Green Cabbage Shredded or chopped
  • 3 Carrots Grated
  • ½ Onion Finely grated or diced
  • 1 bunch Fresh Cilantro or Fresh Basil Chopped

Dressing

  • 1 cup Vegan Mayonnaise Just Mayo or Hellman's work great
  • ¼ cup Rice Wine Vinegar or alternatively lemon juice
  • 3 tbsp Granulated Sugar
  • 2 tbsp Sweet Mustard or alternatively 1 tablespoon wasabi powder
  • Salt and Pepper to taste

Instructions

Dressing

  • In a small bowl, whisk together the vegan mayonnaise with the, vinegar, sugar, salt and pepper. 
    Store in a refrigerator until you are ready to use. 

Coleslaw

  • Add your shredded cabbage and grated carrots to a salad bowl along with the grated onion and fresh cilantro. Toss the ingredients together
  • Pour the dressing over the salad and toss together until everything is coated in dressing. 
    Add extra salt if needed and keep the salad stored in the refrigerator until you are ready to serve.
