It wouldn’t really be summer without coleslaw and this delicious crunchy easy spicy vegan coleslaw is my favourite recipe. It’s the ideal crunchy, hot-weather texture perfect summer salad. And to make it even better, this vegan coleslaw is incredibly easy to make and requires only a few simple ingredients.

This vegan coleslaw is a classic inspired southern treat. It’s loaded with delicious crunchy textures wrapped in creamy southern flavours – just like coleslaw should be. 

Think creamy dressing wrapped around fresh, crunchy cabbage – with just a hint of spiciness. It’s so good, it’s no wonder everyone always asks for the recipe…and no one has ever guessed this coleslaw is vegan.

There’s nothing wrong with making life a little easier. So, if you’re looking to make homemade coleslaw in half the time and with no kitchen mess to clean up, these tips are for you:

Green Cabbage – The quickest cooking hack is to get green cabbage pre-shredded at the grocery store. It will save you extra time if you are in a hurry…and it tastes just as great as home shredded green cabbage.

Carrots – just like with the green cabbage, you can buy ready made grated carrots at the grocery store and save yourself extra time. In addition, the taste will be the same in the end, so it’s a worthy shortcut 

Can this salad be made in advance?

Yes, it can. Coleslaw is one of the best salads to make in advance. It actually gets better when it’s made ahead of time, because the carrots and cabbage really has a chance to soak up all the flavours from the dressing. Just keep the coleslaw in the refrigerator until you are ready to serve. 

How long does this coleslaw last once it’s made?

This coleslaw is good for 3-5 days if kept in an airtight container in the refrigerator…making it ideal for meal prep, parties and healthy lunch bowls. 

Note: the cabbage and carrots will get less crunchy after a few days. 

Can I use other types of cabbage?

Yes. Absolutely, yes. You can easily add shredded red cabbage or any other type of shredded cabbage you would like. For instance, you can mix green cabbage and red cabbage to add extra colours and flavours. This recipe is just the AMAZING basic recipe for simple spicy vegan coleslaw. You can add any extras you like to the slaw. 

How to serve the best easy vegan coleslaw

You can serve this spicy vegan coleslaw at barbecues with a side of grilled portobello mushrooms, my kidney bean skewers or along with vegan burgers. Actually, this coleslaw works well as a side dish to almost any meal, so there’s no going wrong really.

  • In a small bowl, whisk together the vegan mayonnaise with the, vinegar, sugar, salt and pepper. Store in a refrigerator until you are ready to use. 

Coleslaw

  • Begin, by adding your shredded cabbage and grated carrots to a salad bowl along with the grated onion and fresh cilantro. Toss the ingredients together
  • Next, pour the dressing over the salad and toss together until everything is coated in dressing. Add extra salt if needed and keep the salad stored in the refrigerator until you are ready to serve. Enjoy.

Ingredients

  • ½ Head Green Cabbage Shredded or chopped
  • 3 Carrots Grated
  • ½ Onion Finely grated or diced
  • 1 bunch Fresh Cilantro or Fresh Basil Chopped

Dressing

  • 1 cup Vegan Mayonnaise Just Mayo or Hellman's work great
  • ¼ cup Rice Wine Vinegar or alternatively lemon juice
  • 3 tbsp Granulated Sugar
  • 2 tbsp Sweet Mustard or alternatively 1 tablespoon wasabi powder
  • Salt and Pepper to taste

Instructions
