This amazing vegetarian pizza is topped with all my favorites. Think melting cheese, red peppers, delicious mushrooms, earthy spinach and sundried tomatoes. It's so incredibly good.

Ingredients
1Pizza Dough
5tbspTomato Paste
½Red Bell PepperSlices
1handfulMushroomsRinsed and sliced
½cupFresh Spinach
5Sun dried TomatoesChopped
Pinch of Salt
2tspDried Oregano
½cupShredded Mozzarella Cheeseor vegan cheese
5tbspGrated Parmesanor vegan Parmesan
2tbspPine nuts optional
1tbspFresh Mint LeavesChopped (optional)
Instructions
Preheat the oven to 400F.
Line a baking tray with baking paper and gently place the rolled out pizza dough on it.
Spread tomato paste over the pizza and top with, salt, dried oregano, spinach leaves, pepper slices and mushroom slices.
Sprinkle shredded mozzarella cheese over the pizza and top with chopped sun dried tomatoes and a generous sprinkle of parmesan.
Bake the pizza in the middle of the oven for 10-15 minutes or until the pizza crust is done.
Top the pizza with pine seeds and fresh mint (optional) before serving.
