The Best Loaded Vegetarian Pizza
This amazing vegetarian pizza is topped with all my favorites. Think melting cheese, red peppers, delicious mushrooms, earthy spinach and sundried tomatoes. It’s so incredibly good.
Pizza is one of my biggest weaknesses. I adore the stuff and could honestly eat it every day if I could get away with it.

The best pizza crust
When it comes to pizza crust, I have a lot of opinions. The pizza crust needs to be just right and it can’t be too soggy or too hard. That’s why I always end up using one of my three favorite pizza dough recipes. No matter how many new recipes I try, I always return to these three, because they just make the pizza crust exactly how I like it.
Pizza dough cheat
If you’re not in the mood to make your own pizza dough (even though I have a quick 15 minute cheat pizza dough recipe) I got you covered. And I get it. We don’t always have the time or energy to cook from scratch and that’s completely okay.
Buying a ready made pizza dough at the grocery store is a completely viable option. It’s easy and makes cooking a breeze and they’re usually very tasty too.
Making the pizza Vegan
This pizza recipe is really easy to make vegan. Just substitute the cheese with vegan cheese and you’re all set. I like to use vegan shredded mozzarella cheese, but you can use your favorite vegan cheese. Just make sure it melts and gets that cheesy softness.
For the parmesan substitute you can either use vegan parmesan or just switch it out with a tablespoon nutritional yeast to give it that nice and cheesy taste.

Instructions
- Preheat the oven to 400F.
- Line a baking tray with baking paper and gently place the rolled out pizza dough on it.
- Spread tomato paste over the pizza and top with, salt, dried oregano, spinach leaves, pepper slices and mushroom slices.
- Sprinkle shredded mozzarella cheese over the pizza and top with chopped sun dried tomatoes and a generous sprinkle of parmesan.
- Bake the pizza in the middle of the oven for 10-15 minutes or until the pizza crust is done. Top the pizza with pine seeds and fresh mint (optional) before serving. Enjoy.

- 1 Pizza Dough
- 5 tbsp Tomato Paste
- ½ Red Bell Pepper Slices
- 1 handful Mushrooms Rinsed and sliced
- ½ cup Fresh Spinach
- 5 Sun dried Tomatoes Chopped
- Pinch of Salt
- 2 tsp Dried Oregano
- ½ cup Shredded Mozzarella Cheese or vegan cheese
- 5 tbsp Grated Parmesan or vegan Parmesan
- 2 tbsp Pine nuts optional
- 1 tbsp Fresh Mint Leaves Chopped (optional)
