Ingredients
4Portobello MushroomsRinsed
4tbspGarlic Cream CheeseVegan or regular
4tbspTomato Paste
4-6Cherry TomatoesCut into slices
¼cupShredded Mozzarella Cheesenon-dairy for vegan version
¼cupGorgonzola Cheesenon-dairy gorgonzola or similar for vegan version
1tbspDried Oregano
¾tspSalt
Optional
1tbspNutritional Yeastoptional, for vegan version
Instructions
Preheat oven to 350F and grease or line a baking pan with baking paper.
Place the portobello mushrooms bottom side up and spread the garlic cream cheese over the rinsed portobello mushrooms. Next, spread tomato paste on top and add shredded mozzarella cheese. (If making the vegan version, sprinkle nutritional yeast on top at this stage)
Next, place the tomato slices on top and season with salt and oregano. crumble gorgonzola cheese (or vegan gorgonzola cheese) on top.
Bake the portobello mushrooms in the middle of the oven for 20 minutes or until the mushrooms are cooked though and the cheese have melted and started to turn golden.Serve and enjoy.
