1tbspCoconut Oilor Olive Oil
1poundBrussels SproutsRinsed and Quartered
3clovesGarlicMinced
Juice from ½ Lemon
2tspDried Rosemary
1canChickpeas
½cupVegetable Broth
1cupPlant Milk
3tbsp Peanut Butter
2tbspSoy Sauce or Tamari
Pinch of salt
Pinch of Pepper
Instructions
Heat coconut butter in a large pan and add the quartered brussels sprouts. Let them cook at medium high heat for a few minutes while stirring occasionally, until the sprouts start to turn golden brown.
Next, add the minced garlic, salt, pepper, rosemary and soy sauce and stir to combine.
Pour in the chickpeas and let everything cook for a few minutes. Next, add the vegetable broth, lemon juice, and plant milk and bring to a boil. Turn the heat down and let the dish simmer while you cook the pasta as instructed on the package.
If the sauce gets too thick, just add a little of the pasta sauce to the dish and stir together.
Serve by topping the pasta with the creamy pasta sauce.
