This Vegan One Pot Easy Creamy 5-ingredients Pasta with brussels sprouts is deliciously creamy, garlicky and savory. It’s packed full of flavors, even though it’s only a 5-ingredient dish – not counting the spices.
I came up with this easy recipe as a spur of the moment idea – after looking into the refrigerator and realizing I hadn’t gotten around to shopping and didn’t have much groceries left. It was one of those last minute dinners that came together way better than I had expected.
Because I was in the mood for comfort food but also wanted to have a healthy dinner, I created this super easy cheat pasta. It is fully loaded with amazing flavors that tastes sinful without adding to the waistline.
Maximizing the flavors
Because this is an easy and budget friendly vegan dinner, all the spices serves a purpose and bring out the best in each other. The dish is seasoned with aromatic dried rosemary that’s coupled with garlic and lemon – it’s a fantastic flavor combination that always maximizes the other spices and gives a wonderful nod to mediterranean cooking. The lemon, garlic and peanut butter work together with the creamy sauce to really bring out the sweetness and slightly nutty flavors in the brussels sprouts. It’s so simple and so good.

Brussels Sprouts seem to be one of those veggies that everyone has an opinion about. Some people like them, some people hate them, but everyone has an opinion. For me, I think brussels sprouts is all about the right preparation. Cooked in the proper way, they have a sweet and nutty flavor that’s enhanced by the peanut butter in this recipe.
To reduce the cooking time and make sure the brussels sprouts turn out sweet, tender and a little golden, I like to cut them into quarters. If you want larger chunks, you can simply cut the sprouts into halves.

- Heat coconut butter in a large pan and add the quartered brussels sprouts. Let them cook at medium high heat for a few minutes while stirring occasionally, until the sprouts start to turn golden brown.
- Next, add the minced garlic, salt, pepper, rosemary and soy sauce and stir to combine.
- Pour in the chickpeas and let everything cook for a few minutes. Next, add the vegetable broth, lemon juice, and plant milk and bring to a boil. Turn the heat down and let the dish simmer while you cook the pasta as instructed on the package.
- If the sauce gets too thick, just add a little of the pasta sauce to the dish and stir together.
- Serve by topping the pasta with the creamy pasta sauce. Enjoy.

- 1 tbsp Coconut Oil or Olive Oil
- 1 pound Brussels Sprouts Rinsed and Quartered
- 3 cloves Garlic Minced
- Juice from ½ Lemon
- 2 tsp Dried Rosemary
- 1 can Chickpeas
- ½ cup Vegetable Broth
- 1 cup Plant Milk
- 3 tbsp Peanut Butter
- 2 tbsp Soy Sauce or Tamari
- Pinch of salt
- Pinch of Pepper
