Grilled Beetroot Garden Salad

This Grilled Beetroot Garden Salad is delicious. The beetroots are coated in a crispy jacket made with almond milk, almond flour, sesame seeds and spices – and add the fact that the beetroots are grilled and crispy on the outside, yet sweet and tender on the inside…it’s a winning combination.

Spring is really starting to peek through. The sun is a little warmer, the cherry blossoms are blooming and yet most of us are either stuck at home or in the office. For me, spring is all about enjoying nature as it reawakens and cooking with all the veggies that are in season. That’s one more thing I adore about this recipe – it not only tastes good, it’s also filled with many of the wonderful veggies that are in season right now.
I call this my Grilled Beetroot Garden Salad, because it’s what I would be getting from my garden if I had one. Since I can’t do much about my garden dreams from my city flat, I can at least cook with the wonderful seasonal veggies – thank you super markets and local grocery stores.

Getting the Beetroots right

Beetroots are one of those veggies that everyone seem to have a strong opinion about. People either love it or hate. If you’re a beetroot lover, this recipe is definitely for you…but if you don’t really like beetroots, I still want to encourage you to try this recipe. Something amazing happens to root veggies when you grill them. The taste changes, and that earthy flavor turns sweet – and add the amazing crunchy crust on these beetroots, and you won’t believe how good they can be.
You can cook the beetroots anyway you prefer. I like to grill mine in the oven, but you can also deep fry them in oil (which tastes amazing) or grill them on the Barbeque. Whicever way you choose to make them, just make sure you grill them at medium heat – because you want to give the beetroots time to soften and become tender on the inside while they get crispy on the outside.

How is this Grilled Beetroot Garden Salad made? It’s so simple:

Instructions

  • Preheat the oven to 350F.
  • Mix almond flour, sesame seeds, salt and gyros spice mix together on a plate. Pour almond milk into a bowl.
  • Next, cut the rinsed beetroots into ½-1 inch slices and dip them into the almond milk before dippping them in the almond flour mixture. Try to coat all sides of the beetrootsin the almond mixture.
  • Place the coates beetroots on a baking sheet covered with baking paper and bake the beetroots in the oven for 20-25 minutes or until the beetroots are tender on the inside and golden on the outside.
  • While the beetroots bake, quickly mix the salad dressing.
  • Once the beetroots are cooked, take them out of the oven. Place a generous bed of salad on a plate and drizzle with salad dressing. Place the grilled beetroots on top and serve with a sprinkle of fresh herbs and a yogurt dressing (optional). Enjoy.

Ingredients

  • 4 large Beetroots Peeled
  • ½ cup Almond Milk or regular milk if you prefer
  • ½ cup Almond Flour
  • ½ cup Sesame Seeds
  • ½ tsp Salt
  • 1 tbsp Gyros Spice Mix (or mix paprika, curry powder, thyme and a pinch of chili)
  • 4 cups Fresh Mixed Salad

Salad Dressing

  • 1/4 cup Olive Oil
  • Juice from 1 Lemon
  • Pinch of Salt
  • Pinch of Pepper
  • 1 tbsp Sweet and Sour Chili Sauce

Yogurt Dressing (optional)

  • 1 cup Plain Plant Yogurt or your favorite plain yogurt
  • Juice from ½ Lemon
  • Salt to taste
  • 1 bunch Fresh Mint Leaves Chopped
