My favorite thing I’ve been eating lately: is this easy vegan mushrooms and broccoli sheet pan. It’s a dump-everything-on-a-sheet pan kinda recipe and I’m here for it. Low effort, maximum taste. That’s what I call a dreamy dinner. Plus, this easy plant-based roasted vegetables dinner is a healthy, low-calorie meal that’s packed with nutrients, vitamins, and minerals. But it doesn’t taste healthy…it tastes cozy and comforting. A warming plate of tender roasted portobello mushrooms served on a bed of roasted broccoli and golden brown carrots. Just grab a fork and dig in…or scoop up a piece of warm, soft naan, or pita bread and make it into a sandwich.

How to serve easy vegan mushrooms and broccoli sheet pan

I like to serve this easy roasted vegetables dinner family style. All the vegetables are served on the roasting pan, drizzled with a little extra olive oil, a splash of sweet chili sauce, and a generous garnish of fresh basil. Then let everyone dig in and load up their own plates. Super cozy and so easy.

It’s comforting and filling. But it’s also loaded with healthy nutrients, cozy meaty textures, golden and crunchy roasted veggies, happy colors, and lots of delicious flavors.

Ingredients needed to make easy portobello mushrooms dump sheet pan 

Portobello mushrooms – the meaty mushrooms add so much texture and umami flavors to the dish. If you don’t have portobello mushrooms any other type of mushrooms can be used. A combination of larger brown mushrooms, portabellini/chestnut mushrooms, or even baby Bella mushrooms all work well. 

Red onion – cut the red onion into wedges and enjoy the way it softens while roasting in the oven. The edges become almost Caramelized and the onion flavor takes on a hint of sweetness. If you don’t have red onions, regular white or yellow onions will work just as well.

Carrots – smaller-sized carrots add a tender bite and are delicious almost 

Herbs and spices – we’re working with thyme, oregano, salt, pepper, and smoked paprika. If you don’t have smoked paprika, regular paprika will also work.

How to make easy mushrooms and broccoli sheet pan 

Dump and season – place the rinsed mushrooms, carrots, broccoli florets, and onion wedges on a lined sheet pan. Drizzle generously with olive oil and season with smoked paprika, thyme, oregano, salt, and pepper. Toss to coat everything. 

Bake – cover the sheet pan with tin foil and bake the mushrooms broccoli sheet pan in a preheated oven at 400F (190 degrees Celsius) for 35-40 minutes or until the vegetables are golden brown and lightly crispy in places. For extra deliciousness, remove the tinfoil during the last 10 minutes of baking.

Serve – serve the roasted vegetables as is with a garnish of fresh basil and a drizzle of sweet chili sauce.
