The best spicy Frittata

I don’t often eat eggs anymore, but sometimes I struggle to get enough protein. When it comes to high quality protein and nutrients there’s really nothing that can compete with eggs. It’s a fully loaded nutrient meal, packing so many vital vitamins and nutrients that it’s difficult to name them all. Newer studies indicate the amazing healing effect eating eggs have on our brains. It has the equvalent restorative effect as deep REM sleep, and might even help prevent alzheimers.
Meal Prep
This is one of my favorite vegetarian meal prep breakfast recipes. It’s so easy and healthy, and because you can freeze them for later, it’s a super quick healthy breakfast on busy days.
When I make it as a meal prep, I usually like to cut the fritatta into muffin sizes, and freeze them as a breakfast sandwich. It doesn’t get any easier than that. Plus, it reminds me of a healthy, spicy McMuffin, so it’s no wonder everyone loves them.
Just make the breakfast sandwich in advance, wrap it in a damp paper towel and put them in a clean food container, freeze it for later, and reheat in the microwave when you’re ready to eat.
Making a breakfast sandwich
Although, the frittata can be easten just as is, and it’s pretty darn good that way, it’s also so amazing to use them in a breakfast sandwich. I like to make them using a healthy rye muffin, but you can use whatever type of muffin you prefer. Just cut the frittata into approximately the right size and make your breakfast muffin. You can eat the muffin right away or freeze them for later. They’re amazing both fresh and reheated.
Reheating the frittata
When you want to reheat your frittata, or breakfast sandwich, you simply unwrap it, place it on a microwave safe plate and heat it for 2 minutes. If it still needs more time, just heat it for 30 seconds extra, and repeat as necessary until it’s cooked and ready.
How to serve
I like to eat the fritatta as is, with a few extra veggies on the side and a little salsa dip. But you can eat it any way you prefer. Try using the fritatta in a breakfast sandwich (I like to make a breakfast sandwich using my healthy rye buns), roll a slice up in a tortilla along with avocado slices and a little extra taco sauce, or serve with a fruit salad and bread. The possibilities are endless.
How is the best spicy frittata made? It’s so easy:
- Preheat the oven to 400F.
- Heat olive oil in a skillet and pour in the chopped veggies. Add the fajita seasoning and cook the veggies at medium high heat for a couple of minutes. Take the veggies off the heat and spread them out evenly in the bottom of a baking dish.
- Next, crack the eggs into a bowl and whisk together with the cottage cheese. Season with a pinch of salt and pepper and pour the egg mixture gently over the veggies.
- Bake the frittata in the middle of the oven for 25-30 minutes or until it’s cooked.

Ingredients
- 6 Eggs
- ½ cup Cottage Cheese
- 1 Red Bell Pepper Sliced
- ½ Red Onion Diced
- ½ cup Sweet Corn
- 10 Capers Chopped
- 10 Black Olives Chopped
- Pinch of salt
- Pinch of Pepper
- 1 tbsp Fajita Spice Mix
- 1 tbsp Olive Oil
Instructions
- Preheat the oven to 400F.
