Raise your hand if you love zoodles. I know I do and that’s why I love this yummy 5 ingredients zoodles with coconut sauce recipe that Ea created.
One of the things I love about this recipe is that it’s so yummy and made with less than 5 ingredients. Plus it’s super easy and quick to make. It doesn’t get much better than that in my book.

I love food and I love cooking, but that doesn’t mean I want to spend too much time doing it every night. On those really busy days all I want is to cook my dinner quickly without compromising on flavour.

Another thing I love is recipes that are 5 ingredients or less – it makes it so easy to make. There’s no special ingredients, no long shopping lists and no hassle. Just a few simple ingredients that come together to create a very tasty meal.

Now, I’m not going to lie – I’m a huge fan of coconut milk. I just love the richness and the creaminess it brings to a meal. It enhances all the other flavors and brings out the best in the silken tofu and zoodles.

How to cook zoodles:

The thing about zoodles is that they are amazing if you don’t overcook them – otherwise they tend to go limp and soggy. I like my zoodles with a little bit of a bite, so I recommend cooking them for 2-3 minutes tops. Heat up the coconut milk first, then add the zoodles when it’s hot. That will make it easier to control the cooking time and make sure they don’t get overcooked.

How to make this Easy zoodles with coconut sauce recipe:

Rinse the squash and cut of the ends. Use a peeler to cut the squash into long thin slices of zoodles.

Next, heat up a wok or a frying pan and pour the coconut milk into it. Heat up the coconut milk before adding the zoodles. Cook the zoodles at medium high heat for around 1 minute (make sure not to overcook them).

Add edamame beans, salt, chili and lemon juice and stir quickly together. Break up the silken tofu and add it to the dish. Take off the heat and serve.

Garnish with a handful of dill and enjoy.

You can serve as is or with a side of garlic bread or my Poppy Seed bread.

Ingredients

  • 2 Zucchinis
  • cup Edamame Beans
  • 1 can Coconut Milk
  • ½ cup Silken Tofu
  • 1 handful Dill
  • 1 Lemon – juice from
  • Pinch of Salt
  • Pinch of Chili

Instructions
