This Caramelized Beets, Peppers and goats cheese pasta is as tasty as it is colorful. Think spicy and sweet, earthy and tangy all coming together in one easy dinner. Although, this recipe is vegetarian and not vegan, it can easily become vegan as I’ll reveal further down in the post.

As the temperatures have dipped and the weather is becoming grey and bleak, I feel the need to cook more colorful comfort foods…but I still want my comfort food to be as healthy and nutritious as possible without losing any flavor. This easy beets pasta recipe has all that and more. It’s a simple, no fuss, colorful meal that’s even meal prep friendly. 

It doesn’t get much better than that.

Okay, so I know you’re thinking “enough with the chitchat. Let’s get to the recipe” so here it is. Let’s start out by answering the most frequently asked questions I get, then we’ll move on to the details, so you can get cooking.

What vegan cheese is best to use in Pasta?

That’s a difficult question to answer, because everyone has a different taste experience with vegan cheeses. Here’s a couple of my favorite vegan cheese options for this recipe (but always choose your own favorite):

  • Vegan cashew cheese 
  • Silken tofu
  • Vegan mozzarella cheese 
  • For a extra cheesy flavor, add 2 tablespoons nutritional yeast to the pasta.

What kind of pasta should I use?

Any type of pasta will work in this recipe. I find that larger pasta like pasta penne, tagliatelle and similar works best to scoop up the sauce and veggies…but any and all types of pasta and spaghetti noodles can be used. 

Gluten-free Caramelized Beets and peppers option 

If you need a gluten-free pasta dish, then this recipe is a great choice. Just replace the regular pasta with gluten-free pasta of your choice. Rice pasta, corn pasta or my favorite gluten-free choice lentil pasta will all work great in this dinner.

How is this oven roasted balsamic peppers and beets pasta recipe made? It’s very easy. Just:

  • Preheat oven to 400F and line a baking tray with baking paper. 
  • In a small mixing bowl, stir together olive oil, balsamic vinegar, thyme, salt and pepper. Add the diced beets, peppers and sliced mushrooms to the pan and pour the dressing over. Mix everything together until all the veggies are coated in seasoning. 
  • Next, bake the beets and veggies in the oven for 20-30 minutes while stirring halfway through. 
  • Cook the pasta as instructed on the packaging.Once the pasta has cooked, drain away almost all the water, but leave a few tablespoons behind. 
  • Mix together the Caramelized beets, peppers and mushrooms and make sure to scrape all the seasoning into the pasta. Drizzle olive oil on top and add the chopped fresh mint leaves and crumble goats cheese on top. Toss the pasta together and serve.Enjoy.

  • Pasta for 4 people
  • 2 tbsp Olive Oil divided
  • 1 large Beet Peeled and sliced
  • 6-10 small peppers sliced
  • 1 cup Mushrooms button mushrooms, cremini or your choice
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Maple Syrup
  • 1 tbsp Thyme fresh or dried
  • ½ tsp Sea salt or Kosher Salt
  • Pinch of Pepper
  • 1 bunch Fresh Mint Leaves chopped
  • ½ cup Vegetarian Goats Cheese or vegan cheese
