Originally, I wasn’t going to post my super simple Hasselback sweet potatoes recipe, because it’s so incredibly simple that I didn’t think there would be much need to post it on here. But after these Hasselback potatoes appeared on my recipe for amazing portobello mushroom pizza post, I got a ton of requests to also post the potato recipe. So, here it finally is. 

I hope you’re ready for just how mindblowingly simple these potatoes are to make and just how tasty they are. All I can say is, you better make a double batch, because everyone always wants double and triple servings.

You can serve the cooked potatoes as is with a creamy sauce, or topped with a spoonful of plant butter or a drizzle of olive oil. There’s no going wrong with this easy recipe. The mushy potatoes are amazing at soaking up sauce and I love to serve them with my favorite vegan gravy…because, let’s be honest, one of the best parts of eating potatoes is using them as a vessel to scoop up sauce like your life depended on it. 

One of my favorite simple ways to serve these oven roasted potatoes is topped very generously with vegan mushroom sauce and a garnish of fresh herbs. It’s irresistibly tasty and so incredibly simple.

Yes, I know I’ve already mentioned it, but I’ll just say it again for good measure. These oven roasted sweet potatoes are a must have vegan Thanksgiving and Christmas recipe. It’s not just simple to cook and makes holiday cooking a breeze, it’s also mouthwateringly tasty and will make everyone want more. 

What seasoning should I use for sweet potatoes 

You can add any seasoning you like. Keep it simple with just a sprinkle of salt or add extra flavors with herbs. Mix several herbs and spices for extra impact. Some of my favorite seasoning for sweet potatoes are:

  • Dried thyme 
  • Basil 
  • Rosemary 
  • Black pepper 
  • Smoked paprika 
  • Dried chili flakes 

How to cut Hasselback Potatoes

Cutting Hasselback potatoes is easier than it looks. Just grab two similar size wooden spoons and place them on either side of the potatoes when you slice them. The spoons creates a natural stop and this way all the slices will have a similar depth. 

Don’t have wooden spoons? Fear not. You can use chopsticks the same way as wooden spoons.

How are Hasselback sweet potatoes made? It’s very simple:

  • Preheat oven to 400F and line a baking tray with baking paper.
  • Rinse the sweet potatoes and pat them dry with a clean towel.Slice the potatoes thinly, stopping about 1/2 inch from the bottom. Rub the potatoes with olive oil and season with salt and pepper (and any other spices you want to add).
  • Place the potatoes on the lined baking tray and bake in the oven for around 30-40 minutes or until the potatoes are soft on the inside when you stick a fork in them.
  • Serve with a drizzle of olive oil or a dollop of plant butter on top . Sprinkle with herbs and enjoy.

  • 4 large Sweet Potatoes with the skin on
  • 3 tbsp Olive Oil or Coconut Oil
  • ½ tsp Sea salt or Kosher Salt
  • Pinch of Pepper

Optional:

  • 2 tsp Smoked Paprika
  • 2 tsp Dried Thyme
