Now, when I call this a 5-ingredients pizza recipe, I mean it’s 5 ingredients not counting spices and kitchen stables. But despite only having a few simple ingredients, it’s fully loaded with tastes and textures.

This is one of those really easy and oh so tasty recipes that I usually make out of leftovers. Whenever I have cooked beetroots left over, this is how I like to use them. Because I’m a big fan of not letting food go to waste, I always try to come up with meals that fit together, so I can use any leftovers as part of next days dinner. It’s not only budget friendly, it’s also great for the environment. But when it comes to using leftover beetroots, that can be a bit of a challenge.
It may just be me, but I don’t get super creative when I look at beetroots. It’s not one of those veggies that go with everything, so it took a bit of effort on my side to figure out ways I could turn leftover beets into a delicious dinner. Of course the answer to that had to be pizza. Everything tastes amazing on pizza, and this recipe is no different. The cooked beetroots become almost caramelized in the oven thanks to the balsamic vinegar. It’s so good and takes a plain old beetroot and turns it into a delicious, flavorful meal.

Easy Pizza shortcuts

So, one of the things I adore most about this recipe is how versatile it is. You can make it in almost no time, if you choose to use shortcuts like using ready made pizza dough from the grocery store and buying ready made pesto. Or, if you have more time, you can make your own pizza dough and pesto. The choice is completely yours, and there’s no right or wrong way to do it. I have made it in all ways. Because, the fact is, when I’m tired I usually get super lazy and ready to use some serious shortcuts. I have no problem using store bought pesto. I ususally get the organic kind made with tons of fresh basil and garlic, and I’m good to go.
For the pizza dough, I either use my quick 15 minute cheat pizza dough recipe or if I’m in a rush, I just a pizza dough from the store. Although, I think home made always tastes better, there are just days when it’s too much work and effort. And, let’s face it, the pizza turns out great either way.

  • Preheat the oven to 450F.
  • Roll out the pizza dough and place it on a baking sheet covered in baking paper. For the first pizza layer, spread the pesto evenly over the pizza. Next, top with the tomato paste and spread that out over the pizza in an even layer.
  • Top the pizza with sliced beetroots and zucchini (you can make it into a pretty pattern or just haphazardly place them on the pizza).
  • Sprinkle balsamic vinegar and olive oil on top of the veggies and season with dried oregano, dried thyme and salt.
  • Finally, top the pizza with whatever cheese you prefer and bake in the middle of the oven for 10-15 minutes or until the pizza is done. Serve hot and enjoy.
