You can serve this recipe as is (because it’s so good that it really doesn’t need anything more) or top it with your favourite non-dairy cheese (like cashew cheese). Or if you are vegetarian, you can serve this salad with vegetarian feta cheese to add extra creaminess and a little hint of salt.

  • Start by carefully cutting the skins off the watermelon. Next, cut the watermelon into 1-inch chunks and add them to a large salad bowl. 
  • Add the diced bell peppers, diced spring onions and tomatoes to the bowl and drizzle lemon juice on top. Season with sweet and sour chilli sauce, salt and gently toss to combine. Finally, top with fresh basil and pumpkin seeds and serve. Enjoy.

Ingredients

  • ½ Watermelon Skin removed, diced
  • 1 Red Bell Pepper Seeds removed, diced
  • 1 lbs Cherry Tomatoes Cut into halves
  • 3 tbsp Sweet and Sour Chili Sauce
  • Salt to taste
  • Juice from ½ Lemon
  • 1 Spring Onion Diced
  • 1 handful Pumpkin Seeds
  • 1 bunch Fresh Basil Chopped
