What kind of protein powder should you use for this chocolate cookie recipe?
You can use your preferred vegan and gluten-free protein powder (or even leave out the protein powder if you prefer – just add a little more almond flour to the dough if you leave out the protein powder). Every protein powder tastes a little different, so it’s important that you use your favourite brand and flavour.
Can I use a substitute to almond butter?
Yes, you can easily use peanut butter or cashew butter as a substitute to the almond butter. Using peanut butter masks some of the tahini flavours, but adds a delicious peanut flavour that’s just as addictively good.
Great healthy chocolate chip cookies
Because these cookies are made using nut butter, applesauce and almond flour, not to mention protein powder, they are actually healthy and can be eaten as a meal substitute. I like to serve these cookies as a healthy cookie alternative for children. They are a hit with kids and adults alike…and make a great healthy midday snack or a healthy breakfast cookie on a busy day.
Freezer friendly vegan tahini protein chocolate chip cookies
These delicious healthy protein chocolate chip cookies are freezer friendly and can be made in advance. You can freeze the cookie dough as is – just roll the dough into a log shape and freeze it in a reusable ziplock bag. Once you are ready to bake, just take the cookie dough out of the freezer and allow to defrost for 10-20 minutes. Cut into 1/2-inch cookies and place on a lined baking sheet. Bake for 10-12 minutes at 350F or until the cookies are golden on the outside.
The cookies can also be frozen once baked.
How are these amazing easy vegan gluten-free tahini protein chocolate chip cookies made? It’s very simple. Just:
Instructions

- Add the ground flax seeds to a small mixing bowl and add 4 tbsp cold water to create the flax eggs.
- In a large mixing bowl, mix together the almond flour, vanilla protein powder, vanilla powder, and baking soda.
- In another mixing bowl, mix together the almond butter, tahini, applesauce, maple syrup and flax eggs. Add the dry ingredients to the wet ingredients and stir together. The texture should be like a regular thick cookie dough (if it’s too wet, mix in extra almond flour).
