This Delicious Easy Harvest Salad with pears is so incredibly good. It’s loaded with juice pear wedges, roasted smoky chickpeas, fresh basil, sweet sun dried tomatoes and creamy feta cheese.

Honestly, this amazing wedged salad is so good it should probably come with a warning. It’s flavours are amazing. The way the sweetness and freshness of the pears come together with the roasted smoky chickpeas just creates a magically delicious salad that is almost impossible to resist.

I always make sure to make extra of this salad, because I know everyone will be going in for seconds and thirds. It’s just too good to resist.

Vegan option

Of course I have to include a vegan option, because I know a lot of you prefer not to eat dairy cheese. Luckily there’s plenty of delicious vegan options available and you really don’t need feta cheese if you don’t want to use it.

My favourite vegan feta cheese substitute is using silken tofu. Silken tofu has much of the same texture and coolness as feta cheese, although the taste is different. When I use silken tofu for this recipe, here’s how I like to use it:

First, start out by pressing the excess water out of the tofu. I have a tofu presser, but you can easily just place the tofu on a plate with a clean cloth on top and place a heavy plate on top to squeeze out excess water.

Next, crumble the tofu into a bowl and season with salt (I like to use herb salt for extra flavour), a little paprika and a drizzle of sweet chili sauce. Stir together to combine and the tofu feta is ready to use.

So, how is this Delicious Easy Harvest Salad recipe made? It’s so simple. Just:

  • Start. by removing the pits from the pears and slice into ½-inch wedges. Add the pear wedges to the salad bowl and immediately drizzle lemon juice and a pinch of salt. Stir together to make sure all the pear wedges are covered in lemon juice (to prevent them from going brown).
  • Heat olive oil in a skillet or frying pan and add the drained chickpeas. Let the chickpeas cook at medium high heat for a few minutes before adding soy sauce, smoked paprika, sambal olek, minced garlic and a pinch of salt. Stir together to combine and let it cook for a few more minutes shile stirring occasionally, until the chickpeas become golden brown. Remove from the heat and add to the salad bowl. 
  • Next, chop sun dried tomatoes and add to the salad. Gently mix everything together to combine and finally top with feta cheese, pine nuts (optional) and fresh basil. Serve and enjoy.

This delicious easy harvest salad is incredibly easy to make and loaded with harvest goodness. Think juicy sliced pears, sun dried tomatoes, roasted smoky chickpeas, fresh basil and creamy feta cheese.
This wedge salad can easily be served as a delicious stand alone dish, side dish or healthy lunch. It doesn't get much better than this.

Ingredients

  • 6 small pears Rinsed
  • 2 tbsp Olive Oil
  • 2 cans Chickpeas Rinsed and drained
  • 3 cloves Garlic Minced
  • 2 tbsp Smoked Paprika
  • Salt to taste
  • 1 tbsp Soy Sauce or Tamari
  • 1 tbsp Sambal Oelek Chili paste Medium hot or as you prefer
  • 1 bunch Fresh Basil Chopped
  • 3 tbsp Pine Nuts Optional
  • cup Feta Cheese Crumbled
  • 1 Lemon – juice from
