This easy 3-ingredients noodles with apples and onions are incredibly quick and simple to make…and it’s mouthwateringly good. Made very simply using only 3 main ingredients, and a few extra spices, it’s also very budget friendly. 

This recipe has been a stable quick and easy go-to in my life since I first created it during my student days. Back then I was just beginning my cooking journey, but my cooking skills were limited and so was my budget…to add to it, I was trying hard to lose weight at the time and focusing only on healthy meals. Out of that, I came up with this apples and onions noodle recipe, because cooking noodles and rice were about as far as my cooking abilities stretched. But I quickly discovered the magic of what happens when you combine the right ingredients together in one dish. Even a few simple ingredients can make a simple meal amazing when the flavours combine.

Yes, you read that right. This noodle recipe is great for meal prepping as it can keep in the refrigerator for 3-4 days no problem, and it’s freezer friendly. 

I like to make a big double or even triple batch of these noodles and freeze the leftovers in ready-to-heat containers for later. It makes it easy to have a healthy and nutritious meal when you have a busy day and are running low on time.

Gluten-free noodles

If you are looking for a gluten-free option, there’s several alternatives. The first one is to simply replace the regular noodles with rice noodles or another type of gluten-free noodle. Just be sure to check the ingredients list on the packaging in the grocery store to make sure the noodles you buy are actually gluten-free. 

Another easy option is to use zucchini or squash as the noodles. It not only tastes amazing and is completely gluten-free, it also makes the dish extra low in calories. 

Low calorie vegan noodle recipe

Yes, it is actually possible to eat delicious noodles on a low-calorie diet. This vegan noodle recipe is loaded with healthy nutrients and it’s actually low in calories. I used this recipe as a stable in my own journey to losing 50 pounds. It’s especially helpful in a weightless journey if you use rice noodles in the recipe. It cuts the calories way down and there seems to be something about the way the ingredients work together in this recipe that helps boost the metabolism and burn those fat cells (at least it did for me. I can’t guarantee similar results for others).

  • Heat water to a boil and pour it over the noodles in a large mixing bowl. Cover with a lid and let the noodles cook.
  • Heat olive oil in a large pan and add the onions and apples. Let the onions and apples cook at medium high heat for 5-7 minutes while stirring occasionally. Once the onions start to go soft, add the minced garlic, curry powder, dried thyme and tamari sauce and combine. Let the dish cook a few more minutes before adding the sesame seeds. 
  • Once the noodles are ready, drain away the excess water and add the noodles to the pan (or if your pan isn’t large enough, add the ingredients in the pan to the bowl) . Season with salt and pepper and mix everything to combine. Add extra salt if needed.Serve hot and enjoy.

  • 10oz (300g) Noodles or rice noodles if gluten free
  • 3 tbsp Olive Oil
  • 4 Apples Cut into wedges, pits removed
  • 3 Onions Cut into wedges
  • 2 cloves Garlic Finely chopped
  • 1 tbsp Curry Powder
  • 1 tbsp Dried Thyme
  • 1 tbsp Tamari or Soy Sauce
  • 2 tbsp Sesame Seeds
  • Salt and Pepper to taste
