This easy pie recipe isn’t just vibrant and eye-grabbing, it’s also a great recipe to serve for guests. Because it’s simple to make it takes the stress out of cooking for company. This recipe is basically French…but for the one topping, I like to add. Because I’m a HUGE fan of sweet and sour chili sauce of course I like to drizzle it on top of my pies, too. It adds a little extra color, and the sweetness and spiciness are magical. 

If you’re not as fond of chili sauce as I am, or would rather serve as a fully French pie recipe, you can just leave out the sauce and simply garnish generously with fresh basil. The pies will still be irresistibly good.

Vegan pie crust 

You can absolutely make your own vegan pie crust if you have the time…but as this recipe is called super simple it uses grocery store puff pastry as the pie dough. Most ready-made puff pastry is already vegan because that’s the easiest way to produce puff pastry. Just check the ingredients list on the puff pastry package to make sure it is in fact vegan. 

So, if you prefer not making your own pie crust this is the recipe for you…and if you like to make your own homemade pastry dough this easy and super tasty pie filling is still for you. 

So, how is this easy vegan French vegetable pie recipe made? It’s very simple. Just:

  • Preheat the oven to 350F and line a baking sheet with baking paper.
  • Heat olive oil in a pan and add the zucchini, onions, bell peppers, and tomatoes. Season with oregano, thyme, salt, and pepper. Combine everything and let it cook for 5 minutes while stirring occasionally. Set aside.
  • Roll out the puff pastry and gently place it on the lined baking sheet. Carefully cut the puff pastry into your desired size. I like to cut into four equal parts.
  • Next, spread the garlic cashew cream cheese evenly on top of the pastry until it almost reaches the edges. Top with the ratatouille mix and spread it out.
  • Bake the pie in the oven for 15-20 minutes or until the puff pastry is golden and baked through. Serve topped with pumpkin seeds, fresh basil, and a drizzle of sweet and sour chili sauce.

  • 1 Puff Pastry Dough Vegan
  • 2 tbsp Olive Oil
  • 5 tbsp Vegan Garlic Cream Cheese Cashew cream cheese is my favorite
  • 10 Plum Tomatoes
  • 1 Zucchini Sliced
  • 1 Red Bell Pepper Sliced
  • 1 Red Onion Diced
  • 2 tsp Dried Oregano
